Ingredients

  • 1 tbsp vegetable oil
  • 1.5 lb lean ground sirloin or turkey
  • Kosher salt and freshly ground black pepper
  • Diced Peppers and Onions Kit*
  • 1 can (15 oz) The Fresh Market Tomatoes of choice
  • 1 can (15 oz) Organic Black, Cannellini or Kidney Beans of choice, drained
  • 1 pkg Simply Organic Mild Chili Seasoning Mix

Diced Peppers and Onions Kit:

  • 5 oz Diced Yellow Onions
  • 5 oz Diced Green Bell Pepper

Directions

In a large saucepan, heat oil over medium-high. Add the ground meat, season with salt and pepper and cook until cooked through and no longer pink, about 5 minutes. Add the Diced Peppers and Onions Kit and cook another 5-7 minutes until veggies are tender and meat is brown.

Add tomatoes and beans to the saucepan. Add the seasoning mix and ½ cup water and bring to a boil; reduce heat and simmer for 10-15 minutes until desired thickness is reached, adding more water if desired. Taste for seasoning and add more salt if desired. Serve with corn muffins.

Chef Suggestions:

  • Garnish with sour cream, sliced green onions, shredded cheddar cheese, avocado or chopped fresh cilantro
  • Add hot sauce or diced jalapeños for extra heat
